When the cold hits, there is only one acceptable way to spend a Saturday afternoon—next to a fire, slowly feeding the coals under a cast-iron three-legged pot. We’ve taken a classic Megamaster recipe, made some serious adjustments, and created the absolute ultimate winter warmer for the community.

The secret here? A legendary Ideal milk and chutney sauce that gets added right at the end to make it dangerously rich.

Grab a cold one, stack the wood, and let’s get this pot simmering.

(Note: We grabbed all these ingredients at Woolies, but you can easily find them at any local grocery store. If you want to check out the original un-tweaked version, you can find it here)

The Quick Stats

  • Prep Time: 30 mins
  • Time on the Fire: Roughly 2-3 hours
  • Serves: A proper crowd (and maybe some leftovers)

Your Arsenal (Ingredients)

The Potjie:

  • 500g Lamb Leg Cubes
  • 2x 800g Stewing Lamb
  • 3 Large onions, sliced
  • 3 Large potatoes, cut into chunks
  • 250g Large mushrooms, sliced
  • 250g Small carrots
  • 250g Baby marrows (optional, but a good call)
  • 250g Mini corn
  • 40g Lamb Flavoured Thickener
  • 10ml Dried rosemary
  • 10ml Salt
  • 25g Beef Liquid Stock Concentrate (mixed with 200ml water)
  • 250ml Red wine (one for the pot, one for the master)

The Legendary Sauce:

  • 250ml Ideal milk
  • 250ml Chutney
  • 1 Heaped tablespoon medium curry powder

Step-by-Step Guide

1. Stoke the Fire

Light your fire early. A potjie is all about patience, so get a solid bed of coals going before you start chopping. (If you’re cheating on a gas braai, preheat to 180°C and keep the lid closed).

2. The Sizzle

Heat a splash of oil in your potjie pot directly over the coals. Sauté your sliced onions until they are golden brown, then take them out and set them aside.

3. Brown the Meat

Drop your lamb leg cubes and stewing lamb into the hot potjie to brown the meat nicely. Season it up with the salt and rosemary while it sizzles.

4. The Long Simmer

Once the meat is browned, throw those golden onions back in. Pour in your red wine and beef stock. Put the lid on, manage your coals to keep a gentle simmer, and leave it alone for 1 hour and 15 minutes.

5. Layer the Veg

Layer your potato chunks, carrots, and your lamb-flavoured thickener (or brown onion soup powder) on top of the meat. Do not stir! Put the lid back on and let it simmer for another 30 minutes.

6. The Final Magic

Mix your Ideal milk, chutney, and curry powder together. Pour this rich sauce over the potjie, and add your mushrooms, baby marrows, and mini corn right at the top. Let it simmer for a final 10-15 minutes until the veggies are tender.

7. Dish Up

Serve this absolute masterpiece over a massive bowl of samp mielies.
