A warm loaf baked in a cast-iron pot beside the coals is hard to beat. This no-knead beer bread is simple to mix, easy to cook outdoors and brilliant with butter, chutney or a potjie.
The Quick Stats
- Prep Time: 5 minutes
- Time on the Fire: 45–60 minutes
- Serves: 1 loaf
Your Arsenal (Ingredients)
- 4 cups self-raising flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 can (440ml) lager, at room temperature
- Butter, for greasing the pot and brushing the loaf
Step-by-Step Guide
1. Mix the Dough
In a large bowl, stir together the flour, sugar and salt. Pour in the lager and mix just until you have a rough, sticky dough. Don’t overwork it.
2. Prepare the Pot
Butter a flat-bottomed cast-iron pot generously. Add the dough and brush the top with melted butter.
3. Set Up Gentle Coals
Place the lidded pot beside gentle coals, then put a few coals on the lid. You want steady heat all around the pot, not a fierce fire underneath.
4. Bake the Bread
Bake for 45–60 minutes, turning the pot occasionally for even cooking. It’s ready when the loaf is golden and sounds hollow when tapped.
5. Serve Warm
Let it cool slightly, then tear into it while it’s still warm. Add butter, chutney or serve alongside your potjie.
