There are side dishes - and then there are mielies wrapped in crispy bacon and served with rich Parmesan butter.
This one is built for the braai: charred mielies, salty streaky bacon and a buttery finish that will have everyone hovering around the grid. Keep an eye on them, because these won’t last long once they come off the fire.
The Quick Stats

- Time on the Fire: 30 minutes
- Serves: 4
Your Arsenal (Ingredients)
- 4 mielies
- 1 packet streaky bacon
- Soft butter
- Grated Parmesan cheese
Step-by-Step Guide
1. Braai the Mielies
Get your coals to a medium heat and braai the mielies for about 15 minutes, turning them regularly so they cook evenly and pick up a bit of colour.
2. Let Them Cool
Take the mielies off the grid and allow them to cool just enough to handle.
3. Wrap the Bacon
Wrap two streaks of bacon around each mielie, securing the bacon snugly as you go.
4. Back on the Fire
Return the bacon-wrapped mielies to the grid. Braai, turning carefully, until the bacon is crisp and golden.
5. Make the Parmesan Butter
While the bacon crisps up, mix the soft butter and grated Parmesan together until properly combined.
6. Serve
Take the mielies off the fire, add a generous spoonful of Parmesan butter and serve straight away. Simple, smoky and seriously good.
